I have a weakness for soft cheeses -- me too @ShiningStar  and @Adge  loves cheeses too

that is awesome @Shaz51 it would still be warm up in QLD wouldn't it, it is absolutely freezing here. im in a robe and ugg boots and have a blanket over me

Hi @Shaz51 it was a recipe from the Guardian and I had to wait til I could get the ingredients. 

Cook up the medium grain white rice you'll use as base.

Fry thin slices of eggplant til brown on both sides. Do this in batches if you need to. I added a few drops of sesame oil to the canola, and towards the end of còoking added some slivers of red capsicum and some chopped broccolini for extra vitamins. 

The sauce is the best part. A slosh each of Kikkoman soy sauce, mirin and cooking sake mixed with small matchsticks of green ginger but I also added a finely chopped clove of garlic. Stack the veggies in the pan, pour the sauce over the top and cook again -  let it reduce and get sticky. Then serve the veg with the remaining sauce over individual bowls of rice.

Now I have the sauce ingredients I'll use the recipe when family visit.

im going good, trying to stay warm, have not been up to a lot, we have a mouse plgue here and the shed is full of dead mice and an awful smell. hoping to get it cleaned up soon so i can get back into my projects.
